Since partnering with MIRA-Dashi™ for an event in November 2022, Ryukishin has continued to collaborate with MIRACORE™, including co-developing Koyasan Noodles. At NAMBA Ryukishin RIZE, two new ramen dishes using MIRA-Dashi™ were introduced in May 2024.
Today, we present a tasting report of these much-anticipated ramen!

Posters in English are displayed on the restaurant's windows, letting visitors know that they offer Vegan-friendly and HALAL-friendly menus.
This change was made during the menu renewal in May. The area is bustling with international tourists due to nearby hotels.
The availability of Vegan menus encourages mixed Vegan and Non-Vegan groups to visit, demonstrating the positive impact of the renewal.
As the first shio-ramen specialty shop in Japan, Ryukishin is renowned for its dedication to quality. Today, we will try the "Vegan Shio-Ramen."
The Shio-Ramen Perfected After Numerous Trials
It is none other than President Matsubara who is serving the ramen.
While preparing the ramen, he shared insights into its development.
"During the trials with MIRA-Dashi™, I realized that its unique flavor should be fully embraced. When we made that adjustment, we created an excellent broth.
After extensive tasting by professionals and others, we were confident in offering this at our restaurant."
Utilizing the distinct flavor of MIRA-Dashi™—only Ryukishin, with their expertise in both shio-ramen and MIRACORE™, could achieve this feat.
Anticipation builds for the ramen, said to be even more refined than earlier Vegan Shio-Ramen offerings at events.
Tasting the Vegan Shio-Ramen!
Unable to wait, I took a sip of the hot broth with a spoon. The clear umami followed by a bonito-like aroma was captivating.
The soup had a distinctly ramen-like impact while maintaining a clear taste, showcasing the depth of MIRA-Dashi™. The flavor burst with each bite of the noodles.
The combination of noodles, ingredients, and seasonings transformed the taste, keeping me engaged until the last drop.
From my perspective, ramen with a strong, satisfying flavor from the first bite often feels like an effort to finish. In contrast, this shio-ramen provided sustained satisfaction until the end.
According to President Matsubara, the balance of saltiness in the soup, noodle thickness, MIRA-Dashi™ quantity, and soup oil is crucial. This artistic balance ensures the perfect finish of satisfaction.
Ryukishin, mastering the use of MIRACORE™ to craft a perfect bowl of ramen, continues to innovate their menu. I look forward to more creative ramen dishes in the future.
