Yuppa, known for its innovative fast food using fresh Kyoto yuba (tofu skin), has developed a new menu featuring MIRACORE™. I visited their limited-time pop-up store to experience this exciting collaboration. Interviewee: Mr. Jinshi Watanabe, founder of yuppa

yuppa: Serving unique fast food made from fresh Kyoto yuba, kuruma-fu (wheat gluten), and seasonal vegetables. Yuppa offers nutritious and healthy options. The brand expresses the concept of Japanese Buddhist cuisine (Shojin cuisine) as convenient, on-the-go gourmet.

Visited the Pop-Up Store

 A stylish pop-up store has opened in the trendy Nakazakicho area.

The Origins of yuppa

Mr. Watanabe, the founder of yuppa, was born in a temple in Kyoto where they served creative Shojin cuisine. Since infancy, he has been accustomed to eating this cuisine, which formed the foundation for yuppa.

The brand was established to cater to people who are health-conscious but don't want to compromise on taste, as well as foreigners seeking delicious, Japan-inspired plant-based food. Yuppa also aims to rediscover the value of traditional ingredients like Kyoto yuba.

Currently, they are in the business preparation phase, using pop-up stores for market testing. This pop-up is their third, following locations in Yodoyabashi and Kitahama.

This time, I ordered the new menu items featuring MIRA-Dashi™: Spicy yuppa and a soy milk soup. I opted for takeout as I was heading to a meeting.
It’s really the perfect way to enjoy fast food!

The standout feature of yuppa is the yuba wrapping. It’s the largest fresh yuba I’ve ever seen!

The Spicy yuppa contains dry keema, kachumber salad, and tandoori kuruma-fu. Each bite offers new flavors, ensuring you never get bored.

True to its name, Spicy yuppa has a distinctive spiced aroma. The flavors are rich and umami-packed, which I attribute to the power of MIRA-Dashi™.

The soy milk soup, loaded with chunky ingredients, has a gentle taste that perfectly balances the spiciness of the Spicy yuppa.

I was particularly impressed by the tandoori kuruma-fu in the yuppa. It’s packed with flavor and you can’t stop eating it, making it a perfect snack or side dish.

Mr. Watanabe mentioned, "There are flavors that can only be achieved with MIRA-Dashi™." It seems that MIRA-Dashi™ supports the deliciousness of yuppa's healthy fast food, making it something you’d want to eat every day.

This pop-up event was their final step before opening a permanent store. Mr. Watanabe was brimming with ideas for what they could do with MIRA-Dashi™, so we're excited to see their future developments!
